women have outgrown the era when they would jump on a chair at the sight of a mouse.
(1)该句中jumping-on-a-chair-at-the-sight-of-a-mouse 是作者根据叙述内容需要而即兴臆造的一个合成形容词, 用来修饰 era, 相当于the era when they would jump on a chair at the sight of a mouse。
That's a not-so-easy-to-operate machine.
Look at those stick-in-the-mud people.

Do you know how people are afraid of mice? Well in movies and that you always see the women standing on chairs so the mouse cannot climb up her legs. I hope that helps you...
