It is easy to make and even easier to devour fresh from the oven. Ingredients Starter: 1 package dry yeast 2 cups lukewarm water 2 cups flour Dissolve yeast in water. Add flour to mix. Bread: 3 cups pumpernickel flour 2 cakes yeast 1/2 cup warm water 6 cups unbleached flour 2 teaspoons salt 1/2 cup honey Steps 1. Mix the pumpernickel flour into the starter. 2. Add 1 cake of yeast. 3. Add half a cup of water and stir in. It is okay to add more water if the mixture feels too thick - do this by feel. 4. Flour a rolling board. Take the dough and knead it on the board for 5 - 10 minutes. This can be tough on the wrists, so if you have a helper, share the task. The ability to knead dough improves with practice. 5. Put the dough into a greased bowl. Olive oil makes a good choice for greasing the bowl. 6. Cover the dough with a damp teatowel or baking paper. Set aside in a warm place and allow to rise. It should double in size before you touch it again. 7. Punch the doubled dough and add the remaining ingredients - the rest of the flour, the honey, yeast and salt. More water can be added if needed (see "Tips"). 8. Knead again for 5 - 10 minutes. 9. Divide the dough into two halves. Place each dough half into greased or lined loaf tins for baking. 10. Bake at 400ºF/250ºC for 35 - 40 minutes. Tips · Correct stiff dough with the addition of more water. · Correct sticky dough with the addition of more flour. · Try to use filtered water where possible; it increases the healthiness of the loaf. · Remember that altitude changes will affect cooking times. · Maryan of Rexipe (her photo above), suggests that this bread is perfect dipped in olive oil and balsamic vinegar.
